This trail will guide you to discover the work and influence of the Gaillacois winegrowers on the territory. The views of the landscapes shaped by the cultivation of the vines reveal geometric perspectives and a beautiful palette of colours. Along the way, the buildings encountered also bear witness to their other skills as builders. The meeting of oceanic and Mediterranean climates, between humidity and heat, caressed by the Autan wind, the Gaillac vineyard develops on six terroirs, three of which are predominant, which structure it into three slopes of specific geological nature. The terraces of the left bank which run along the banks of the Tarn and whose soils are composed of pebbles, gravel, sand or boulbènes. The right bank slopes, facing south and dominating the entire Tarn valley, where the soils are mainly clay and limestone. The Cordes plateau, from Cahuzac-sur-Vère to the medieval town of Cordes-sur-Ciel, the Cordes plateau dominates the Vère valley. This terroir is characterised by white and stony soils. Between Albi and Toulouse, the Gaillac appellation is at the very heart of the Occitanie region. It is the oldest appellation in this region, which bases its history on its thousand-year-old roots, while resolutely turning towards the production of young, modern and appreciated wines. The wines of the appellation are made from traditional grape varieties, typical and full of character; Mauzac, loin de l'oeil and Ondec for the whites, Brocol (iron Servadoul), Duras and Prunelart for the reds. From the brick-red heart of the old bastide, the path leads up to the wooded hillsides. Along the way, the carefully tended landscapes of the Gaillacois vineyards reveal a fine palette of light and colour. The bastide queen: At the heart of the city, the square is the crossroads of all meetings. The streets that converge on it are often also decorated with arcades, covered passages under the houses in which shops open and markets are held. The square is at the centre of a geometric spindle-shaped, checkerboard or concentric building. The whole is still often protected by a wall. This is the bastide... In Albigensia, the bastide is king. Of a fascinating and abundant past. It still vibrates, perhaps for ever, to the Cathar, English and Huguenot rhythms. Its walls are polished, its brick has a patina and its wood is cracked. You look for it in Cahuzac-sur-Vère. But you enter it through the Hirissou gate in Puycelci, the Horloge gate in Cordes-sur-Ciel in Cordes-sur-Ciel, the Garrics in Castelnau-de-Montmiral, the Porte Neuve in Bruniquel. One calms down at the Larroque fountain. You weigh your grain at the Place des Mesures in Penne. And you can dance in Lisle-sur-Tarn, in one of the largest bastide squares in the South-West. White grape varieties not found elsewhere: The Gaillac winegrower has always taken care to select the grape varieties best suited to the terrain and exposure. Typical, specific and high in character, two Gaillac grape varieties, Mauzac and Len de l'el (Loin de l'oeil), stand out for their rarity. Mauzac excels in the construction of white wines. Its aromas are reminiscent of apples and pears for soft wines with low acidity. There are some real "marvels" in pure Mauzac. With a particular aptitude for making sparkling wines, this grape variety lives only in Gaillac and Limoux. Len de l'el ? Its bunch has a very long stalk which keeps the grape "away from the eye" (in viticulture, the eye is the bud). Its origin is remote. It exists only in Gaillac and produces a wine with a very fine floral or citrus aroma. Combined with Mauzac, it is fresh and supple.

Plains and hillsides, vineyards, umbrella pines and cypresses transform the medieval bastide town of Lisle-sur-Tarn into a city of Occitan Tuscany in the summer light and heat. Discover the history of this part of the Tarn by exploring its landscape. Lisle-sur-Tarn is the only bastide town on the plains of the Tarn with its own port. Trade (cereals, woad, wine, etc.) and cultural exchanges made possible by river traffic enriched the town until the 18th century. The arrival of the railway signalled the end of the gabares' reign. Lisle is also one of the most typical bastides in the south-west of France, with its chequered ilos, ‘les moulons’, its central square, ‘la carra’ with its covered walkways and the ‘pountets’, a covered passageway at high level allowing streets to be watched and safe passage from one ilot to another. Like all the towns and villages in the Tarn valley, the houses here are built in brick (ochre for unbaked brick, red for fired brick).

The water trail is located in Montans on the heights of the river Tarn, which will remain invisible to those who do not dare to venture into the undergrowth! The aquatic environment and varied vegetation attract a host of birds for you to observe. After following the hedgerows, vineyards and fields, head into the woods towards the Tarn. Listen to the lapping of a spring, the sound of the wind in the bamboo grove, and tread the ancient bridges of the towpath. Hidden beneath tons of silt brought down by the river and overgrown by vegetation, this little-known heritage will transport you back in time to the days when men navigated the Tarn!

Maison départementale de la forêt de Sivens, 11 km northwest of Gaillac: access via the D 999 and the D 132. A biotic massif: In 1976, the Sivens forest massif was bought from the Houillères du Bassin du Centre et du Midi by the Department of Tarn. This 620-hectare estate became a hunting reserve in 1978. This animal and plant bonanza was recognised as a natural zone of ecological, faunistic and floristic interest (ZNIEFF). At Sivens, the intervener is keen to show the good side of his actions in an environment that he wants to be biotic. The forestry operation uses simple coppice, coppice under fir and regular fir. On the animal side, small carnivores are favoured and limit the rodent population. The variety of plants attests to the great diversity of ecological conditions in Sivens, whose atmosphere differs from the surrounding area.

On more than 600 hectares of this departmental forest, there is a wide variety of tree species, both deciduous and coniferous, to discover. A wealth that is the object of the attentive care of the foresters because the tree is here a support for awareness. This 2.5 km walk is part of an 8 km loop through the Sivens forest.

This urban trail offers the walker different aspects of the city and allows the evocation of the rich historical past of Gaillac. From Saint-Michel Abbey, the route descends towards the river to follow the banks of the Tarn, making the city seem far away! The Hortalisse district, with its maze of paths leading from garden to garden, tells the story of the market gardeners who, until the mid-20th century, supplied the surrounding markets. After crossing the historic town center, the trail heads towards the banks of the Thomas river (former ditches filled in and developed in the 19th century), to descend towards the Tarn and its ancient port, which was very prosperous until the advent of the railroads.

In the heart of the Gaillac vineyards, even the paths celebrate the wine festival... Clay, limestone or gravel have a taste of the land. Broom, blackberry or raspberry aromas emerge. The mark of the winegrower leaves its mark of passion. Go up the avenue towards the station, then turn left onto avenue du Maréchal Juin and cross the level crossing. In front of the house, 130 m further on, turn right between two fields. At the end of the road, turn left onto the side road and after 230 m, turn right. At the level of a farm, climb the steps to the left. Follow the road in front of you. At the bottom, turn left. Border the field. Cross the D18. At the crossroads, go straight on. Cross the roundabout to Avenue Marcel Pagnol. At point 2: Turn right onto chemin de Poujoular. At the crossroads, turn left, then turn left at the first street. Turn right. Go around the church on the right. Walk along the cemetery and reach the stadium.

Superb views of the bastide town of Castelnau-de-Montmiral, vineyard crossings, hillside landscapes: this walk offers you all the beauty of the Gaillacois in a single route. The 8-kilometre-long Gradille Path passes through woodland (pubescent oaks and maples) and vineyard slopes, to the delight of your eyes. During your walk, you can admire the panorama of Castelnau-de-Montmiral, the chapel of Gradille dating from the 11th century or the small bridge which allows you to join Saint-Jérôme to Gradille.

A trip on the River Tarn aboard a traditional flat-bottomed boat. The Toulouse-Lautrec museum is located in one of the most beautiful corners of Albi: the Berbie Palace. The Palace is one of the Episcopal City’s major sites with World Heritage status. The museum is recognised internationally for the works of this artist from Albi. TOULOUSE-LAUTREC, A UNIQUE COLLECTION IN THE WORLD The world’s most important public collection of the works of Henri de Toulouse-Lautrec, including 31 posters by the lithograph painter, is to be found in Albi. There are also no fewer than 219 paintings, 563 drawings and 183 lithographs displayed in the museum. Early works, major portraits, paintings of brothels, prints from the world of entertainment, advertisements and later works are presented there, giving this museum an exceptional collection. Each stage of the production is represented, highlighting his gift for observation, his talent as a draughtsman and his quality for capturing significant detail. The route around the museum is enriched with information panels. To visit the museum is to meet the man, this native of Albi, of whom this city is so proud. The first rooms are devoted to his early works representing his family, his friends and his favourite theme: animals. The Museum Of The Art Of Chocolate is an exhibition space, cultural area and theatre dedicated to chocolate – and there’s even a boutique that we call a ‘chocolatheque’! There’s a permanent exhibition of sculptures and works of art made entirely of chocolate waiting just for you, as well as temporary themed exhibitions and a tasting guide to the ‘grands crus’ of chocolate. The museum also offers tailor-made ‘Discovering Chocolate’ workshops based on themes including wine and chocolate, diet chocolate, tastes and aromas, and making chocolates…

The Sivens forest is an extension of its "big sister" the Grésigne forest. Until the beginning of the 20th century, a whole working population lived from and in the forest. Pitsawyers, ruscassiers extracting the precious tannins from the oak bark for leather work, charcoal makers producing charcoal... Mixing with the oak forests, coniferous trees have been planted more recently to supply the props for the Carmaux mines. At the gateway to the Gaillac vineyards, the Maison départementale de la forêt is dedicated to raising awareness of the environment and leisure activities, and offers a full range of facilities for discovering the forest: events, themed exhibitions, interpretation and hiking trails. In autumn, don't miss the mycological outings in these woods, which are rich in mushrooms. Listen up! It won't be long before you notice the presence of the hosts of these places. At the beginning of autumn, you will hear the bellowing of the stag in the distance. And there... it's a roe deer! Here it's the wild boars that have stripped the ground bare by digging it up. Ah, a dead tree! You may be lucky enough to discover a giant! Well, almost, it is the Lucane Cerf-volant, 8 cm long, it is the largest beetle in Europe.

Once owned by the Carmaux Colliery and Railway Company, who used wood from the forest to make railway sleepers in the mines, today you can still find oak and chestnut trees, lovely beech trees, hawthorn and some conifers. Easy rambles for all the family from 2 to 8 km including a route lined with nesting boxes. The Archéosite archeological museum will take you back in time to rediscover an era when the village of Montans was famous throughout the Roman Empire for the production of Samian pottery. These high quality red ceramics were produced on an almost industrial scale here. The museum also offers beginners’ workshops in pottery and mosaic work, archeological conferences and even an Antiquity Week in April, featuring historical re-enactments.

A recreational lake with a number of activities depending on the season: supervised swimming, water slide, canoeing and kayaking, pedalos, fishing, shaded picnic tables, barbecues, mini-golf and tennis. The Château de Mayragues (12th - 17th century) and its pigeon loft built on 4 columns, both listed as Historic Buildings, surrounded by its bio-dynamic vineyard, sit proudly in the midst of the magnificent rolling countryside of the Bastides Albigeoises. The Château de Mayragues is one of the few remaining examples of the regional fortified architecture with a half-timbered, overhanging gallery surrounding the top of the château built of the light-coloured local limestone. The splendid pigeon loft sitting on 4 stone columns, typical of the Languedoc region, the formal box parterre, the vineyard ( cultivated in bio-dynamics since 1999), the surrounding woods and fields of sunflowers and corn, make an ideal setting for the summer concerts which have been performed in front of the château for the last 20 years. The château and the pigeon loft have undergone an extensive 35 year restoration programme using traditional meterials of stone, wood, lime and sand, and in 1998, during the course of the restoration, were awarded the Grand Prix of the Vieilles Maisons Françaises. The half-timbered gallery provides a unique setting for the guest B&B bedrooms and an extensive view over the garden and the surrounding countryside. Visiting the winery, tasting the bio-dynamic wines of the domain, or simply relaxing in the garden are the ideal complement to discovering the treasures of the Bastides Albigeoises.

UNESCO World Heritage listed (in the context of the Santiago Pilgrim Ways). The first church built in the region in the south Gothic style; it retains a magnificent portal decorated with eight Romanesque capitals and remarkable wall paintings carried out between the 13th and 16th centuries. Back in the 16th century, when the French Religious Wars were in full effect, the church of Notre-Dame du Bourg at Rabastens was looted by the Protestants, who then turned the building into a military barracks. When the Catholics finally reclaimed their church, they covered it in lime to ‘purify’ it. It was only when some restoration work was being done in the 19th century that paintings – hidden by the lime for centuries – were rediscovered, preserved in fabulous condition. The interior of Notre-Dame du Bourg is seriously flamboyant with red as the dominant colour, accented with blue and gold. Any visitor will be stunned by the beauty of the decoration.

In the restaurant of the Bellevue farm, in a rural setting, the chefs invite you to taste their famous pig on a spit.
