Departure from the Sourigous base, circuit allowing you to discover the hillsides of Salvagnac by technical paths, leading you to the valley of the Vère and the forest of Sivens.

In the Pays Salvagnacois, between vineyards and groves, the paths run alongside stone and terracotta farmhouses. Salvagnac, an ancient fortified village, is home to the castle towers (14th-15th centuries), Notre-Dame church and its treasure trove of sacred art, including a processional cross dating from 1514, and frescoes by Nicolaï Greschny (mid-20th century). In this land of cultivated fields, preference is given to traditional cereals, including wheat. Planted on the hillsides of the Tarn, it provides millers with pure flour for making Lo Cantél, a recipe based on traditional practices that produces a soft, crusty loaf with a melting creamy crumb.

In the heart of the town, a church that impresses with its architecture and grandeur. As the fourth sanctuary built in this place, the church has suffered from the wars of religion. After being pillaged by the Huguenots, it had to be closed to religious worship for several decades. The reconstruction that was necessary in 1856 was accompanied by an extension necessary to accommodate a growing parish, followed by the installation of stained glass windows and the construction of the vault. Bernard Bénézet, a painter from Toulouse, was called in to decorate the walls of the choir, and Sicardou, a sculptor from Toulouse, made the altar of marble and onyx. As for the wood panelling that surrounds the choir, it was made by a craftsman from Villemur. The bell-tower, built in 1875, received then the big bell called "le souc" probably because of its enormous counterweight of wood. It is the oldest part of the monument, because it comes from the previous church. The bell tower now houses 3 bells named "Germaine", "Monseigneur" and "Alain-Marie".

Listed as a historic monument, this key part of the town's old defensive system welcomes visitors at the entrance to the town. An emblematic feature of the town, it now houses a number of exhibitions in a friendly, fun environment. Located in the Notre-Dame district, the Tour de Défense is the town's oldest monument, along with the mill. Built in the 12th century to block access to the city, it was also used as a mill. It has a remarkable roof structure on the ground and ground floors. The city walls rested on the sides of this imposing 2-storey brick tower. In 1830, the upper storeys of the buildings on either side of the Tower were built, partly concealing it. Only a capital and two sculpted heads, remnants of the original church, were salvaged and reused in the current church, built in 1905 in a neo-Gothic brick style.
