Re-established in 1997 in the actual abbey walls, the abbey brewery draws its inspiration from recipes that monk used in days of yore for brewing beer. The idea is to keep up this tradition. The beers now being made are genuine abbey beers. These high-fermentation, non-pasteurised simple and natural beverages are brewed according to the old infusion method. With their slightly bitter taste, these thirst-quenching beers are easily digestible.Ten beers are brewed here:a slightly cloudy ‘blonde’ with a fragrant aroma at 6° alcohola ‘brunette’, with an aroma of malt and coffee-chocolate at 8° alcohola ‘triple’, a spicy blonde, with a fine balance between hops and malt, bitterness and sweetness at 9° alcohola ‘fruity’, a veritable symphony of flavours, combining the dazzling freshness of Morello cherries at 8% alcoholGrand Cru, dark in colour with a creamy brown head and coffee flavours at 10.5° alcohol."Hop" (formerly known as “Cuvée 800”), brewed to celebrate the Abbey's 800th anniversary in 2016, is light in colour with slight citrus notes and 5.5° alcohol.Bière de Noël’, brewed in winter, is amber-yellow in colour and has a still, sparkling taste at 7° alcohol."Excellence Lérins", a Val-Dieu Grand-Cru beer matured in old Lérins wine barrels at 12% alcohol."Excellence Bourbon", a Val-Dieu Grand-Cru beer matured in authentic Bourbon barrels at 13.7% alcohol."Excellence Rhum"’, a Val-Dieu Grand-Cru beer matured in barrels containing Barbados rum at 14% alcohol.Guided tours of the abbey and its history, as well as the abbey brewery, are available to individuals and groups by prior arrangement.
