The 'Cellier aux Moines', built in the 12th century by the Cistercian order (and where the Clairvaux monks once kept a cellar), is now home to thousands of bottles of Champagne. The wines lying in the shadow of its Gothic columns include Communio blancs de noirs, Lux Aeterna blancs de blancs and Libera me/Sylves assemblages.
