Domaine de La Combes aux Rêves
Description
A young winegrower since 2010 with 15 years' experience in viticulture, I have taken over old plots with a heavy chemical past that were ploughed a long time ago.
The plots total 2.5 ha and are grassed, worked and harvested by hand.
The grass is mowed from spring to harvest. We are currently in the process of replanting some of the plots, and have been able to start tilling the soil with our mare, Eline, an Auxois breed.
The vines are treated only with sulfur, copper and nettle, horsetail and comfrey purin. The grapes are harvested by hand and picked in crates.
We carry out all winemaking operations (pressing, ageing in vats or oak barrels and bottling by hand). We have buried 5 Georgian amphorae in our garden, where we leave the destemmed grapes to macerate for several months.
We like healthy, natural products, so it's only logical that our wines should follow suit.

For wine prices, please contact us, depending on the vintage, but you can expect to pay from 11 euros a bottle. The vinegar costs 6.5 euros per 50 cl bottle with pouring cap. Vinegar aged in oak barrels for 4 years under veil, made from our white wines.
