Restaurant Le B

Enjoying a privileged location in the heart of Alsace, between Strasbourg and Colmar, opposite the wine route 15 km away, Hotel Crystal - Restaurant Le B combines tradition and modernity. In a contemporary decor with a hushed atmosphere, arranged around old-fashioned wooden furniture, this address is to be recommended to lovers of good food, who will feel particularly welcome. A restaurant with a gourmet table: From in front of his ovens, chef Thierry Baumert enjoys inventing beautiful combinations of colors and flavors to turn them into tasty little dishes, to the delight of regulars and visiting customers alike. With inventive menus based on fresh produce, the establishment immediately attracts trust and sympathy. As a starter, Thierry Baumert invites his customers to taste his pan-fried foie gras, one of the house's best-sellers. The touch of sweetness is provided by the red fruit compote arranged in a pocket on a round, white plate. The foie gras is placed on top. This gourmet suggestion is best served with an Alsace wine, such as a Pinot Blanc Vieilles Vignes or a Muscat Cuvée Prestige. Another signature dish is veal kidney, whose flavors are enhanced by Cebo Iberian ham and Cebette. On the plate, the addition of chiffonaded Iberian ham and Cebette adds a visually appealing touch. For the main course, the chef suggests roasted farmhouse duck breast, accompanied by a pineapple condiment, pan-fried duck liver and sweet potato purée. The duck breast is cut in half lengthwise, as is the duck liver. Presentation is in layers. A sweet potato purée is poured onto the plate. A pineapple condiment and a pineapple leaf complete the decoration. A little crunchy texture is provided by a pineapple potato chip placed on top. The dessert, meanwhile, is served on a plate. The dessert, meanwhile, offers sparks in the mouth. In the spotlight: a kougelhopf glazed with Alsatian mare. This pastry of Alsatian origin is served with white, red and raisins marinated in mare d'Alsace. It is best enjoyed with a glass of Gewurztraminer Vieilles Vignes from the Ribeauvillé winery.
