Discover the Gaillac vineyards through this Œnorando. Some winegrowers have diversified into olive growing, sometimes even converting to it, simply because they are passionate about it or because the climate is changing for the worse. However, growing olives is not the same as growing vines. This is a major challenge, because while some wine-growing land may be suitable for olive cultivation, its long-term profitability remains subject to the risk of a water shortage or the severe frost still possible in our region. It's a challenge that a few people have decided to take up, betting on a quality market, the craze for short circuits, little local competition and the revival of a somewhat forgotten method of cultivation. The combination of trees and vines, known as agroforestry, is an ancient practice that has long shaped Mediterranean landscapes through the trilogy of olive trees, vines and wheat, and is still practised in some parts of Europe, where cherry trees, peach trees, almond trees and truffle oaks are still grown alongside vines. Trees limit climatic excesses, improve the soil and, by bringing water up from the depths to the surface, also improve water resources. Starting from Salles sur Cérou, this tour takes you to Monestiés, one of the most beautiful villages in France, following the old railway line between Carmaux and Cordes. The Voix du Cérou circuit is perfect for a family ride. Sitting on the saddle, you don't need to exert yourself to cover the 15 kilometres of the route. From Salles-sur-Cérou, you leave the road to join the old railway line to Monestiès. The track is flat, wide, and shaded by the vegetation along the river Cérou. Once you arrive in Monestiès, classified as one of the Most Beautiful Villages in France, you will find many picnic tables for your lunch stop. Before getting back on your bikes, take the time to discover the narrow streets and beautiful houses of Monestiès. The medieval town also has two sites to visit: the tomb and the Bajen-Vega museum. It is on leaving Monestiès that you will have to make an effort to climb the Jouvenate hill. Once at the top, you will have to turn around to admire the beautiful view of the village below. The return to Salles is a leisurely walk along the Zère stream. Nature and heritage lovers, this route is for you! After passing through Cordes with its exceptional architecture, the route heads towards the valleys where the views, the rural heritage and the variety of landscapes are of undeniable interest. The hiker will first walk through steep streets and 800 year old fortified gates. On the ground floor of sumptuous gothic houses, he will find many artists and craftsmen who, as in the past, live and keep the town alive. If you have time, it is advisable to escape the marked route to admire the panorama from the Place de la Bride or Les Remparts, to enter the Church of St Michel (open) or to admire the frescoes painted by Yves Brayer on the theme of the pilgrimage to St Jacques de Compostelle in the Capette (the former hospital of St Jacques, 15th century). Outside the walls of the village, the itinerary goes around the "puech de Mondagne" (name of the hill of Cordes) offering both a magnificent view of the city and a very interesting archaeological or rural heritage. From the bird-filled groves to the banks of the river Cérou, passing through the landscapes of the causse, the path is rich in contrasting natural environments.

Exploring the 13 kilometres of this trail, you will walk along on the limestone rocky trails which run through small valleys adorned with the Souel-Livers’ plateaux cliffs. You will also discover its delicate vine landscape where the white stone brightens up the stunning local architecture. The other inspired hill : As an architectural tribute to the passing of time, Cordes sur Ciel holds an intense power of seduction that knows how to act on great minds. In 1908, Thomas E. Lawrence (Lawrence of Arabia) met it, forgotten: "An artist could (...) paint here for a year without repeating himself, and all his pictures would be beautiful: it is a dream city with also, in addition, a touch of nightmare". In 1954, Albert Camus noted: "one travels for years without really knowing what one is looking for (...) and one suddenly arrives in one of those (...) places which await each of us in this world. The traveller who, from the terrace of Cordes, looks out over the summer night, knows that he does not need to go any further, and that if he wants to, the beauty here (...) will take him away from all solitude".

It is the reign of vertiginous panoramas, where the schist and granite plateaus and the limestone causses compete with the forests, gorges and rivers, while the perched villages, like lookouts, look up to the sky.

The GR 46 is about 80 kilometres long and takes you to the heart of the fortified medieval towns in the north-west of the Tarn, including Castelnau-de-Montmiral, Cordes and Saint-Antonin-Noble-Val. The views from the villages of Penne and Bruniquel, like impregnable citadels, are also not to be missed!

Your steps will lead you towards Mouzieys-Panens and onto the limestone plateau which dominates the Cérou valley. Take advantage of this superb panorama by going to the point of Téroundel, before returning through the undergrowth of Lacapelle Ste Lucie and Védillerie. This itinerary passes through the old village of Mouzieys (formerly a guard village whose mission was to keep watch over the Cordes region), then through the hamlets of Lacapelle Ste-Lucie (drinking water fountain + information panel for hikers + picnic table) and La Védillerie. The chapel of Lacapelle, formerly attached to the village of the same name, is now private (except for the cemetery). It is on the edge of a small tarmac road that the hiker can take to return more quickly to his starting point (count 30 to 45mn); the view on Cordes is very beautiful from this small road. The descent into the wood between Védillerie and Nauze is quite steep and can be slippery in wet weather. This hike is very pleasant in spring, autumn and winter (clear view through the trees).

During the 9.5 kilometres of this loop, starting from the village of Cestayrols (near Gaillac), a great diversity of landscapes made up of vineyards, valleys and sunflower fields will be offered to your eyes. During your journey, you will also discover the very picturesque and charming rural heritage, with its pigeon lofts and its wash houses, witnesses of the activities of our ancestors.

On the stony plateau, the old monks' path crosses a subtle landscape. Crops, groves, vines, paths and traditional buildings make up the harmonious and luminous assembly of a small-scale landscape. A monastic path: Clearing a formerly forested Tarn revealed not only rich land but also almost barren places called "èrm" (wasteland). Like Herm, near Mouysset. Who cleared the land? The monks, for the most part. The monastery of Hauterive (near Castres) was one of the first in Gaul to apply the rule of Saint Benoit. Although this rule recommended that monks should not "spread out into the open", they quickly deviated from it to gain land in the forest and cultivate it. The monks of the Abbey of Bonnecombe, in Rouergue, cultivated around their barn in Bernac (south of Castanet) and used, for six centuries, the famous "Chemin des Moines" to transport aniseed, cereals, coriander, pastel and saffron.

This easy route offers a superb view of the village of Cordes and the surrounding countryside from the Téroundel point. You will walk for some time on the path of the pleaders. Before the reunification of the villages of Mouzieys and Panens (1810), the people of Panens used to go discreetly to Cordes by this path. Hidden from the villagers of Mouzieys by the embankment and the crops, the people of Panens would report minor disputes to the judge in Cordes. The memory of the past: Beautiful washhouses make their water shimmer in Mouzieys-Panens. The one at Thouron, at the foot of the castle, is even home to the Montpellier capillary, a rare protected plant also known as "Venus' hair". The second washhouse is at the end of the bridge of the arcades. If you cross the road, you will find some old watering holes. Local toponymy : The names Téroundel and Térondel appear on the local land register. These names, which are common in the region, come from the Latin turo, meaning height. Not to be confused with Thouron, which comes from Occitan and refers to a place near a fountain or a spring.

A trip on the River Tarn aboard a traditional flat-bottomed boat. Various departures from the banks of the Tarn between 11:00am and 6:00pm. ‘L’Hirondelle’ and ‘Les Copains d’abord’, scows with a traditional flat bottom, cruise along the Tarn and offer passengers unexpected panoramas of Albi’s heritage and a tranquil atmosphere on the Tarn. Rio Loco, is an electric scow that has joined the fleet, with a capacity of 75 people. A commentary completes the experience. Embark on the banks of the Tarn, below the Berbie Palace and Pont-Vieux. The Toulouse-Lautrec museum is located in one of the most beautiful corners of Albi: the Berbie Palace. The Palace is one of the Episcopal City’s major sites with World Heritage status. The museum is recognised internationally for the works of this artist from Albi. TOULOUSE-LAUTREC, A UNIQUE COLLECTION IN THE WORLD The world’s most important public collection of the works of Henri de Toulouse-Lautrec, including 31 posters by the lithograph painter, is to be found in Albi. There are also no fewer than 219 paintings, 563 drawings and 183 lithographs displayed in the museum. Early works, major portraits, paintings of brothels, prints from the world of entertainment, advertisements and later works are presented there, giving this museum an exceptional collection. Each stage of the production is represented, highlighting his gift for observation, his talent as a draughtsman and his quality for capturing significant detail. The route around the museum is enriched with information panels. To visit the museum is to meet the man, this native of Albi, of whom this city is so proud. The first rooms are devoted to his early works representing his family, his friends and his favourite theme: animals. Shopping in a listed site in the heart of the historic center! The Albi market is held in a unique setting, a Baltard-style pavilion built in 1903. More than a century old, it's a popular meeting place for locals and visitors alike. Twenty or so stores open their doors, offering authentic, quality products. Market gardeners, greengrocers, caterers, fishmongers, pork butchers, cheese-makers, pastry-makers... It's even possible to eat under the covered market, with a choice of catering outlets.

Visit the animal park which is home to several species in threat of extinction. A great day out for children and adults! Children can gambol on the shaded route and pet the animals and play in the playground.

Cayla is the birthplace and home of Maurice and Eugénie de Guerin, a brother and sister who were both writers and romantic poets. This fine country house is surrounded by parkland and is classified as a site of special interest. In the heart of the vineyards, between Cordes-sur-Ciel and Gaillac, this traditional Languedoc manor house is the birthplace of the Romantic poet Maurice de Guérin (1810-1839), known for his prose poems "Le Centaure" and "La Bacchante", and his diary "Le Cahier Vert". His sister Eugénie (1805-1848) wrote a diary for him, which is a precious testimony to life in the Tarn in the 19th century. In addition to the visit of the castle, the museum hosts cultural events throughout the year on the theme of poetry, literature and the arts. In the park, hiking trails, including a literary trail, encourage strolling and are all ways to feel the special atmosphere of this place.

The Château de Mayragues (12th - 17th century) and its pigeon loft built on 4 columns, both listed as Historic Buildings, surrounded by its bio-dynamic vineyard, sit proudly in the midst of the magnificent rolling countryside of the Bastides Albigeoises. The Château de Mayragues is one of the few remaining examples of the regional fortified architecture with a half-timbered, overhanging gallery surrounding the top of the château built of the light-coloured local limestone. The splendid pigeon loft sitting on 4 stone columns, typical of the Languedoc region, the formal box parterre, the vineyard ( cultivated in bio-dynamics since 1999), the surrounding woods and fields of sunflowers and corn, make an ideal setting for the summer concerts which have been performed in front of the château for the last 20 years. The château and the pigeon loft have undergone an extensive 35 year restoration programme using traditional meterials of stone, wood, lime and sand, and in 1998, during the course of the restoration, were awarded the Grand Prix of the Vieilles Maisons Françaises. The half-timbered gallery provides a unique setting for the guest B&B bedrooms and an extensive view over the garden and the surrounding countryside. Visiting the winery, tasting the bio-dynamic wines of the domain, or simply relaxing in the garden are the ideal complement to discovering the treasures of the Bastides Albigeoises.

From the 19th century, Varen was the place of residence of the dean of the Abbey of Aurillac. A dozen monks lived in the monastery of which it remains today the oldest castle (XVI) and a medieval building. The current parish church was in fact the monastery dedicated to the Virgin and to St. Peter. To the north, reside the remains of the old parish of Saint-Serge, demolished in 1812. Built between 1050 and 1100, decorated capitals, typical of Romanesque art, the church has no traditional apse. The proportions are surprising for a small community, allows to reveal the existence of a pilgrimage around the body of Saint Sergius.

This museum is dedicated to the fabulous round-the-world trip of the Albi sailor, Lapérouse. To access this museum, one crosses the Pont Vieux to reach Botany Bay Square. From this terrace you can appreciate one of the finest panoramas of the Episcopal City: the river, the scows on the Tarn, the roofs of Old Alby... Jean-François de Galaup de Lapérouse was a native of Albi, born in 1741 in the Gô Manor House. Louis XVI, France's king at this time, appreciated the human qualities and the seafaring talents of the young naval Captain. He was entrusted with the greatest expedition of Louis XVI's reign, being given 2 ships called the Boussole ("the compass") and the Astrolabe. 225 men, sailors, scientists and artists left Brest in 1785, sailing to Brazil, Chile, California, Alaska, Russia, China, Australia ... and ran aground in Vanikoro (Solomon Islands) in the Pacific in 1788. During this trip, he carried out precise and valuable work on cartography and scientific research.

The Berbie Episcopal Palace is next to the powerful Sainte-Cécile Cathedral. The magnificent Palace Gardens, registered as a 'Remarkable Garden', is hidden behind the brick giant with its massive, military appearance. These gardens are one of the most visited locations in the city. The gardens of the Berbie Palace are classic: boxwood arabesques on a bed of white gravel, simply accompanied in summer by a quality floral display. One of the City’s gardeners works there and is responsible for its organic maintenance (chemical treatment is prohibited), its pruning and the summer planting.

Once a former Bishops' Palace, the Berbie Palace and the Sainte-Cécile Cathedral form a striking and unique collection in the Episcopal City, classified as a UNESCO World Heritage site in 2010. It is the prestigious jewel of the Toulouse-Lautrec museum, with an international reputation. Built during the 13th century, the Berbie Palace is one of the oldest castles in France, older than the famous Popes' Palace in Avignon. The Palace of the Bishops of Albi or Berbie Palace (an Occitan word meaning bishop) was built on a naturally fortified site, overlooking the Tarn. Its military architecture affirms the power of the bishops against the consuls of the city. Over the centuries, the bishops transformed it into a leisure residence. Classified as a historic monument in 1862, it is one of the best preserved episcopal palaces in France. In the main courtyard, flanked by two towers, one now arrives at the entrance to the Toulouse-Lautrec Museum. A visit to the palace is closely linked to the discovery of the Toulouse-Lautrec Museum: vaulted medieval rooms, pavements from the Middle-Ages, painted ceilings, chapel, gardens, renaissance gallery, large salons ... all of these in one building! We recommend allowing 2 hours to fully appreciate the Berbie Palace and Toulouse-Lautrec Museum.
