




Facing the Aa River, just a stone's throw from Gravelines, an unusual storefront greets us. This building, over a century old, was once a bistro, one of the many that once graced our villages. It was the local haunt of the workers from the old sawmill next door. Transformed into a restaurant in the 1980s, the building has retained all its charm. Whether you choose the set menu or à la carte, every palate will find something to delight in Olivier's cuisine, which showcases both land and sea produce with equal skill.
"I enjoy using chicory in my dishes. Some people are wary of its bitterness, but chicory adds a certain finesse to many dishes," says Olivier.
