The olive groves

The orchards of the Alpilles produce about 20% of domestic oil production and 80% of table olives. Since 1997, three of the Baux Valley products have had a Protected Designation of Origin: olive oil, broken green olives (in brine) and black olives. The Protected Designation of Origin is a sign of identification of the origin and shows the compliance with specifications on the use of local varieties to be produced using a recognized know-how and to be processed in the geographical area.
