Description

Thomas Barthout has been growing cereals organically since 2008.

On his 20 hectares, he grows ancient wheat, population corn, buckwheat, meslin, einkorn, clover and alfalfa meadows...
The Astrié granite mill transforms bread-making cereals into semi-wholemeal flour.

After 14 years of manual kneading with natural leavening, he is now assisted by a mechanical mixer.
He shapes the dough pieces by hand before baking them in a wood-fired oven.

In 2019, a collective bakery will be set up in Mirebeau to pool resources and make his job even more enjoyable.
