Chocolaterie 1000 Cabosses

Behind 1000 cabosses hides artisan chocolatier François Fressinaud, a young science teacher who has recently turned his hand to chocolate, much to the delight of our taste buds! In 2015, he set up store in Vallière, in the heart of the Plateau de Millevaches, where he creates a whole range of dark, milk and white chocolate treats: bonbons, assortments, moldings and tablets. He works with chocolates from all over the world, including Cuba, Indonesia, Madagascar, Venezuela and Sao Tome We love his bees, Limousin cows, otters (the emblematic animal of the PNR de Millevaches) and his signature chocolate "SMAL" (short for St Marc à Loubaud, the village from which he hails), a blueberry fruit paste in a dark chocolate half-sphere.
