The Vergaville abbey cheese dairy has been keeping the Saulnois cheese-making tradition alive since 1938. Vergaville Abbey, founded in 966, has been home to a cheese production unit since the early 20th century. Passed through the hands of several families, the dairy has since produced Camembert, Port Salut, Italian cheeses such as Asiago and many others. Today, the fromagerie de l'Abbaye is the last small cheese dairy of its kind in the region. It continues to produce its cheeses using traditional methods. Today, the dairy produces a wide range of products: Italian, Lorraine and Alsatian. Thanks to its quality products, it has succeeded in expanding abroad.
