At the end of the 1940s, gigantic fires ravaged the Landes, causing a major ecological disaster but also many deaths. To combat this scourge, firebreaks were designed to limit the impact of these blazes, but also to enable the fire brigade to intervene quickly.

As you walk along the paths, you may come across these strangely shaped pines, bent with an invisible weight and carrying a terrible burden. The wind, laden with sea spray, is the culprit of these deformations. These pines must have been subjected to the fury of the gusts of wind from the open sea for years. Some would say that it's a good thing: these improbable shapes often allow them to resist the harshest of storms!

The "lette grise" is a Gascon term designating a depressed area located behind the dune belt, which often shelters a very diversified vegetation and fauna. Further south, towards Tarnos, you will find the Corbeille d'Or des Sables, a plant that grows only sparingly in this unique region of the world. At Cap de l'Homy, it is possible to come across the Cytinelle, a brightly coloured plant which is the only representative of the cytinus genus in France.

The Yons spring, known for its therapeutic properties, gushes out iron-rich water that has been used for a very long time to treat stomach aches. It is also reputed to have been used for centuries as a meeting place for a gun fair on the night of 7 to 8 September. There, in the middle of the pines and in the dim light of resin torches, weapons and ammunition were exchanged under the greedy eye of swindlers: tests were not allowed until the following morning!

Before the revolution, the King or the local lords, in this case the Baron of Marensin, were the only ones entitled to claim the wrecks washed up on the coast. But the inhabitants "costumed" (or costilled) in such a way as to benefit first from the remains of the wrecks, before the arrival of the representatives of the authority. The people of Saint-Gironnais had a reputation for "diligent" costuming. An anecdote from the 15th century even reports that the parishioners of Saint Girons complained to the Bishop of Dax that their parish priest refused to organise processions to obtain shipwrecks...

Are the people of Saint-Gironnais undisciplined? A bit rascal in any case, when in 1789 and in numbers, they boasted of going to the coast "to take fraud", in this case a nice cargo of tobacco. Since 1674, the tobacco trade had been a royal monopoly and the farmers-general, hated by the population, were responsible for collecting the loot. But the adventure was short-lived, interrupted by the Farm's agents. However, few people were involved in this affair, as solidarity against the 'Ancien Régime' was in the air at the time.

Saint Girons de Lest was located a few kilometres west of the present-day town of Saint Girons. The term Lest is most probably a contraction of the Gascon word "l'estay" which means a lagoon or estuary, perhaps attesting to the presence of a lagoon coast before the invasion of the sands in the 14th century. This cork oak wood sheltered the last farm of the village of Saint Girons de Lest, which disappeared under the sands. The remains of the church of this village, abandoned in 1734, can still be seen at the top of the Tuc de la Capere, a few hundred metres away.

In the 19th century, the water supply was still provided by dug wells that were liable to be contaminated, particularly by animal excrement, a real public health problem. Henri Crouzet, an engineer from the Ponts et Chaussées, found the solution by installing numerous filtering wells in the Landes. These wells are lined with a smooth lime-based coating that ensures a good seal on the walls. A layer of pebbles and charcoal at the bottom of the well also filters out undesirable organic components. In Saint-Girons, the first filtering well to be built was rediscovered by accident, during work in the town centre. Since then, a glass pyramid has protected this ingenious treasure and displayed it for passers-by to see.

The coastal dune, on which the houses of Saint Girons-Plage and Huchet are built, was created from 1822 onwards, invented by the Ponts et Chaussées engineer Jean-Sebastien Goury. With the help of fences, he obtained piles of sand according to a particular profile that he tried to reproduce over 200 km. The dune thus formed, stabilised by the planting of gourbet, thus protected the young pine trees from the sandy winds, which were intended to fix the interior dunes. From 1850 onwards, the State authorised the establishment of bathing hotels and houses. The future Côte d'Argent (named as such in 1905) was born.

The sauveté of Saint-Girons was an area limited by 4 columns (2 remain today) around the church which dates from the 12th century. The space of the sauveté, negotiated between the religious authorities and the local lord, was intended to create a zone of exploitation and settlement. Fugitives, wanderers and the disinherited could take refuge there and remain in safety. In the department, only Bougue, Gabarret and Mimizan also seem to have housed rescues.

The chef serves a refined and generous menu, well-made with the best products selected by himself. He works with specific producers because of their proximity but mainly because of the quality of their products. The menu changes depending on the season but especially due to the produce available from our market gardeners in the surrounding villages.
