Our desserts are also made on the premises, without the use of any appliances.

Our crêpes and galettes are made with organic buckwheat and spelt flours from the Landes du Luquet farm in Vay, Loire-Atlantique.
Our organic farmhouse cider is produced in Vay (44). It ferments naturally and contains no added sulphites.
Our organic wines are grown, harvested, vinified and bottled in the Nantes vineyards.
Our organic ice creams and sorbets are made on a farm in Ile-et-Vilaine. The milk and cream come from the cows on the farm, which uses local ingredients wherever possible (strawberries, blackcurrants, flowers, etc.). The recipes contain no colourings or flavourings.
Our organic ham and sausages are nitrite-free.

Some fresh products, from local organic producers, are subject to seasonality: apples, leeks, spinach, tomatoes, mushrooms, onions, potatoes, goat's cheese, etc.
As we refuse to compromise on the quality and origin of our products, we do not substitute them with conventional or even organic produce from "elsewhere".

We don't use any non-stick utensils; we cook exclusively in stainless steel.
We do not use any plastic containers to heat or store products that have been cooked with butter (apart from sauce dispensers) or oil, or simply cooked charcuterie; we use stainless steel, glass or terracotta.
