






Johanna and Maxime have taken over the family restaurant for a gastronomic version. With 9 years' experience in a Michelin-starred establishment behind him, Maxime, accompanied by his young and dynamic team, offers you new flavours prepared using only the freshest seasonal produce. His wife Johanna, a disciple of Escoffier, ensures the continuity of the work done in the kitchen.
Inside, you'll find a cosy atmosphere, and you'll love the covered terrace with its south-facing sea view. And to help your digestion, you can take a stroll along the coast just outside the restaurant!
Le Saint-Paul is committed to promoting local produce
Chef Maxime Roullier maintains close relationships with renowned local producers: Potager d'Hector (La Plaine-sur-Mer) for sun-drenched vegetables, Spiruline de Retz (La Plaine-sur-Mer) for nutritious seaweed, Pigeons de Pornic (Pornic) for free-range pigeons, Sens des Simples (Pornic) for aromatic plants and Mytilijade for mussels from the plain. This close collaboration guarantees product traceability and unrivalled freshness.
