Chef Samuel Duchêne, a culinary journey through the seasons
Behind the stoves, young chef Samuel Duchêne, trained all over the world, creates a sensitive cuisine inspired by his travels and his deep attachment to the Pays de Retz.
Each month, his short, fresh menu celebrates the work of local producers: coastal fish, free-range eggs, root vegetables, sea salt...
Everything is cooked with finesse and daring. From beetroot marinated in cider and a watercress coulis, to fillet of sea bass with a coconut-curcuma emulsion, the chef weaves a subtle link between land and sea, tradition and modernity. Even the bread is homemade, to extend the experience right down to the last crumb.
Our favourites: an ode to local flavours
It's hard to choose, but some dishes particularly impressed us.
The perfectly cooked wild sea bass is accompanied by a creamy and comforting green wheat and spelt risotto. The squash spiral with maple and the butternut with Timut are surprisingly mild, enhanced by a beurre blanc with Siltimur berries, subtly pearled with parsley.
And to finish on a high note, let yourself be surprised by our signature dessert: Le Tourbillon de pomme Tatin, presented on black sesame shortbread, accompanied by a cloud of Bourbon vanilla, blond Miso caramel and Pop-Corn ice cream with a hint of allspice. A finale full of contrasts, for an unforgettable meal.
