Sustainable tourism

At the foot of Cheval Blanc, which towers 2323 m above the Bléone valleys, Marcoux's eponymous bistro is your first stop for fresh mountain air. On the road to Barcelonnette, a few km from Digne-les-Bains, Cheval Blanc offers a foretaste of Alpine gastronomy.
Mountain burgers, ravioles de romans au gratin, leg of lamb at 7 a.m.: the menu announces the smell of meadows, farms and pastures...
The cuisine here is simple and tasty. The chef pays particular attention to the quality and origin of products, preferring lamb from Sisteron, charcuterie from Thoard, bread and goat's cheese from La Javie... And let's not forget the génépi ice cream from Chabottes to finish the meal with a taste of altitude.
