





At the Donjon, the view is unforgettable, and so is the cuisine of young Chef Gabin Bouguet. Child of the Pays de Caux, he knows perfectly the land and the sea where he was born. This is where his passion for cooking and for the taste of fresh, local and seasonal produce comes from.
At the head of the brigade of the gastronomic restaurant of the Donjon since the end of 2018, Gabin Bouguet has gradually asserted his style to the point of offering a carte blanche essentially based on fish, shellfish, crustaceans and local plants. It is a true Ode to the territory and to Norman gastronomy, which characterizes the dishes respectful of the living, created and magnified by the Chef, with his local producers and fishermen, passionate and committed. But it is also, a sometimes crazy Audacity, which composes this culinary expression, created to the rhythm of nature and the seasons, singular encounters and new agreements between raw and nobler products. The refinement, consistency and creativity of our Chef led him to his first Michelin star in January 2021, which was renewed in 2022. A star that also recognizes the work of all the kitchen teams and Dungeon room. Without forgetting the cellar of the house which offers a sharp selection of more than 500 references.
