After 12 years' experience as chef at the Jules Verne restaurant on the Eiffel Tower in Paris, Benoît decided to make a change. Fuelled by a desire to rediscover a simpler, gourmet cuisine with an Italian flavour, he trained in Paris with Italian master pizzaiolos.
