L’huile de marmotte
Description
D’antan, l’huile permettait aux habitants de Freissinières de cuisiner mais aussi de s’éclairer. L’huile de noix ou d’amandes était difficile à produire du fait de l’altitude. Le prunier de Briançon résiste en montagne et les prunes jaunes de cet arbre fruitier contiennent des amandes. Ces amandes étaient pressées dans des moulins pour produire une huile aux vertus médicinales : l’huile de marmotte.
