Jean, in the kitchen, trained with the great chef Stéphane Buron and then worked in Australia.
Théo has family in the Vendée, so the two decided to settle in La Roche-sur-Yon, near Place Napoléon.
In homage to their characters, the establishment was named "Les Ajités".
Behind the stoves, Jean offers classic French cuisine, between land and sea: local fish from the Les Sables and Saint-Gilles fish auctions, fresh seasonal fruit and vegetables, and meats according to taste.
