Description

This trail will guide you to discover the work and influence of the Gaillacois winegrowers on the territory.
The views of the landscapes shaped by the cultivation of the vines reveal geometric perspectives and a beautiful palette of colours.

Along the way, the buildings encountered also bear witness to their other skills as builders.

The meeting of oceanic and Mediterranean climates, between humidity and heat, caressed by the Autan wind, the Gaillac vineyard develops on six terroirs, three of which are predominant, which structure it into three slopes of specific geological nature.

The terraces of the left bank which run along the banks of the Tarn and whose soils are composed of pebbles, gravel, sand or boulbènes.

The right bank slopes, facing south and dominating the entire Tarn valley, where the soils are mainly clay and limestone.

The Cordes plateau, from Cahuzac-sur-Vère to the medieval town of Cordes-sur-Ciel, the Cordes plateau dominates the Vère valley. This terroir is characterised by white and stony soils.

Between Albi and Toulouse, the Gaillac appellation is at the very heart of the Occitanie region. It is the oldest appellation in this region, which bases its history on its thousand-year-old roots, while resolutely turning towards the production of young, modern and appreciated wines.

The wines of the appellation are made from traditional grape varieties, typical and full of character; Mauzac, loin de l'oeil and Ondec for the whites, Brocol (iron Servadoul), Duras and Prunelart for the reds.

A land of bastides and vineyards, of rugby and gastronomy, dynamic and warm, full of conviviality and joie de vivre, the Gaillacois region is an unmissable tourist destination where wines have their place.

Domaine de Borie Vieille

Pascale Roc-Fonvielle is the 4th generation of independent winemaker on this family estate located on the first terraces of the right bank of the Tarn, backing onto the hillsides of Lisle sur Tarn.Pascale Roc Fonvieille, winemaker on this Fonvieille family estate since 1910, cultivates originality and difference through respect for the terroir and the work of indigenous and historic grape varieties: prunelard, braucol and duras for red and rosé wines, loin de l'œil and mauzac for white wines. The desire to forge a name for herself, to create her own cuvées and share them with others, is expressed throughout this journey initiated in 1997. You'll discover wines with an original, feminine touch. You'll be welcomed at the estate's home, in the former dining room of the "boria", with the warm and friendly spirit of the South-West. Winners in recent years: Concours Général Agricole de Paris, Féminalises de Beaune, Concours des Vignerons Indépendants de France, Concours des Vins du Sud Ouest... The estate is the starting point for the Oenorando Vignes & Clochers vineyard hike. An easy hike starting from the estate parking lot, this 7 km, 2-hour loop takes you between 132 m and 218 m between the vines and the steeples of the churches of Montaigut and Saint Salvy de Coutens. Don't hesitate to come and taste the estate's wines at the end of your walk. Tours of the estate are also available from April to October, Monday to Saturday, 10am to 12pm and 2pm to 7pm, lasting 45 minutes, with a tasting session at the end.

Château Clément Termes

Our family estate on the right bank of the Tarn offers "Traditions" and prestige "Mémoire et Esprit" vintages made from local grape varieties: Mauzac, Muscadelle, Loin de l'Œil, Braucol, Duras, Prunelart and Syrah. The estate has HVE3 certification.Château Clément Termes is a family-run wine estate located in Lisle sur Tarn, in south-west France, in the heart of the thousand-year-old Gaillac vineyards. A little history: The estate was founded by Clément Termes in 1860. Passionate about wine and vines, he built a winery in 1868. The Château was built a few years later. His wines were shipped in barrels throughout France. Most of his customers were clergy. Several generations have succeeded one another: in 1968 Jean David increased the size of the vineyard and enlarged the winery, and in 1970 his son François developed the estate using new techniques. Today, Caroline and Olivier, the 7th generation, are guiding Château Clément Termes into this new century. The wines : Château Clément Termes offers a wide range of wines, all the fruit of the work of an independent winemaker. From the cuvée tradition to the Bulles and the Gaillac perlé, the estate's wines express the terroir of Gaillac wines. In fact, some of the Château's wines are made from local grape varieties that are characteristic of the appellation. The white wines include Mauzac, rich and fruity, and Loin de l'œil, fresh and lemony. The reds include the complex Braucol and the fruity Duras and Prunelard. More well-known grape varieties complete the blends: Sauvignon-blanc, Muscadelle, Syrah and Merlot. All the estate's wines carry the HVE - Haute Valeur Environnementale - label, and Château Clément Termes has been HVE level 3 certified since April 2018. Respect for the environment and biodiversity is one of the estate's key commitments. Domaine Sarrabelle

Laurent and Fabien Caussé are the 8th generation of winemakers on the family estate. They cultivate 50 hectares of vines and create a diversity of five ranges of wines made in the traditional way.Legend has it that the Sarrabelle spring, which gushes out near the medieval Château de Montaigut, was the place where the beautiful Yolande met her lover. Its name comes from the Occitan word "sarro-bello", which means "to embrace one's beauty". The lower parts of the castle, destroyed during the Albigensian Crusade, have been preserved, with the Chapelle de Montaigut above. Today, Laurent and Fabien Caussé are the 8th generation of winegrowers on the family estate. They cultivate 50 hectares of vines and create a diversity of five ranges of wines made in the traditional way. The estate's approach to amphorae is not to use them as transport containers, but to exploit the natural permeability of baked clay during wine ageing. Micro-oxidation is already widely used in oak barrel ageing. It rounds out the tannins and adds complexity to great vintages. The shape of the amphora, the nature of the earth blend and the temperature at which it is fired all play a part in its behaviour towards the wine. Because it is clay, the amphora is neutral in flavour and helps the wine to express its subtle aromas powerfully, with a slight drop in acidity and the development of a richer, fuller structure. The estate has 4 white grape varieties and 6 red grape varieties. In the white varieties, we grow the traditional Gaillac varieties: len-de-l'el or (Far from the eye), Mauzac and Muscadelle, as well as Chardonnay, which is not a conventional variety in the region. The 6 red grape varieties grown are: Braucol, also known as Fer Servadou, Duras, Syrah and complementary varieties: Merlot, Cabernet Sauvignon and Gamay. The 50-hectare estate is located in Lisle sur Tarn, around 30 minutes from Toulouse and 15 minutes from Albi (exit 8 - A68).
