These are the hours of the region’s most important market. There, farmers from the Cocagne and Lauragais regions gesticulate freely, temper their enthusiasm during negotiations, and make a killing—or rather, an even bigger killing. At the Puèglaurenç market, there’s chatter, gossip, and banter all around. From geese to rabbits, poultry changes hands by the thousands. And each season brings its own highlight. The end of the year is overflowing with livers and carcasses, confits, and offal. The farmer’s discretion becomes the buyer’s opulence.
