Le sentier de Saint-Sébastien

Le sentier de Saint-Sébastien
Le sentier de Saint-Sébastien

Description

A rolling hills sheltering rich terroirs kneaded with boulbènes and terreforts in pastel shades. Backed by the hillsides, the farms resonate with echoes of farmyard, like the promise of an opulent and generous gastronomy.

Merchant opulence

Translate Puylaurens into Puèglaurenç and you already breathe Occitan. Every Wednesday morning, this historic town of Cocagne breathes and speaks Occitan loudly. These are the hours of the most important regional market. There, farmers from Cocagne and Lauragais gesticulate in esteem, temper themselves in negotiation and make their cabbages fatter still fatter. On the Puèglaurenç market, there is gossip, gossip and cackle all over the place. From geese to rabbits, poultry is traded by the thousands. And each season marks the event. The end of the year is overflowing with livers and carcasses, with confits and offal. The discretion of the farmer becomes the opulence of the buyer. What is negotiated changes hands quickly, future abundance of the tables of Cocagne.

Guidebook with maps/step-by-step

1. At the crossroads, take the road towards Laurendié. Cross the hamlet. At the first two forks, choose a right. In front of Le Galot, go right.
2. Take the stone path on the left. At Salsefrique, do not take the access road to the house but take the next path on the right and pass at the foot of a plane tree. Cross the path, then slip between two meadows. In the woods, go along the fence of a property, pass it and go down to the right. Follow the path on the left, then the road on the right. At the foot of the Métairie-Neuve-du-Bois-Grand, continue straight on the road.
3. In front of Bertrasse, turn right and go straight. Continue straight on the tarmac. At the top of the hill, take the path on the left towards En Rigal. At the edge of a wood, go straight under the pines. At the path, turn left (! > watch out for electric fences!).
4. At Métairie-Neuve, take the road on the left. Continue straight on this road, leaving En Julio on the right, until the crossroads (! > calvary!) located on the crest.
5. At the crossroads (! > calvary!), turn left and follow the road straight on. 200 m after the “Bardinarié” crossroads, take the path going down to the left just before the bend. At the crossroads with the road, turn right onto it. Reach Saint-Sébastien by road along the cemetery.
